Creamy Tomato Bisque

 

Creamy Tomato Bisque

(adapted from Heather’s Dish recipe)

Ingredients:

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 3 tomatoes, diced
  • 3 cans (or one large can) of diced tomatoes
  • 1 cup of fat-free milk
  • Salt, Basil, Parsley

Directions:

  • Sauté onions and garlic in olive oil in a medium saucepan until translucent.
  • Add all tomatoes, and bring to a boil. Stir in herbs and salt to taste.
  • Add milk and blend (working in batches) until smooth.
  • Serve or refrigerate!
