Creamy Tomato Bisque
(adapted from Heather’s Dish recipe)
- 2 tbsp olive oil
- 1 medium onion, diced
- 2 garlic cloves, minced
- 3 tomatoes, diced
- 3 cans (or one large can) of diced tomatoes
- 1 cup of fat-free milk
- Salt, Basil, Parsley
- Sauté onions and garlic in olive oil in a medium saucepan until translucent.
- Add all tomatoes, and bring to a boil. Stir in herbs and salt to taste.
- Add milk and blend (working in batches) until smooth.
- Serve or refrigerate!
