Feta-Walnut Stuffed Cucumbers
- 1/2 cup walnut halves
- 1/4 cup chopped fresh parsley
- 1/2 cup crumbled feta cheese (about 2 oz)
- 1/4 cup fat-free milk
- 1 sm clove garlic, minced (1/2 tsp)
- 1 cucumber, peeled, halved lengthwise, and seeded
- 3/4 cup fat-free cream cheese
- Combine all ingredients (except cucumbers) in a food processor until smooth and creamy.
- Fill cucumbers with feta-walnut mixture, patting into place with fork or spoon.
