Crockpot Sweet & Sour Chicken

(Recipe by Miranda Mowbray, Biting Life)

Ingredients (serves 3):

1 lb chicken breast, chopped into bite-size pieces
1 can of pineapple chunks in juice, drained (I only used about 3/4 of the can)
1 green bell pepper, diced
1 red bell pepper, diced
1/3 cup Splenda
1/3 cup ketchup
1/4 cup Trop50 orange juice
3 tbsp cornstarch
3 tbsp apple cider vinegar
3 tbsp soy sauce
4 cloves garlic, minced
1/2 tsp ground ginger
1/2 tsp onion powder (or substitute with 1/2 onion, diced)
Salt and pepper, to taste
Cayenne pepper, to taste
Cooked white rice (I used about 1 1/2 cups uncooked)

Directions:

Combine all ingredients (except rice) in a slow cooker and stir to combine.

Cover and cook on high for 4 hours.

Serve over rice.

Enjoy!
